In smoothie cooler/51F, observed spinach leaves/55F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The improperly cold held spinach was immediately and voluntarily discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

In smoothie prep table cooler, containers of yogurt and cut spinach with internal temperatures of 49*F-51*F. Per employee, yogurt and spinach were in cooler overnight. Containers of yogurt and bags of cut spinach were discarded. See embargo form. Ambient temperature of prep table cooler was 47.6*F, taken with inspector min/max irreversible thermometer. Discontinue use of smoothie prep table cooler for storing of TCS foods until repaired. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

In walk in cooler on speed rack, TCS foods (cooked potatoes, cut tomatoes)/ 55*F prepared and cooling in shallow covered containers. Potatoes and tomatoes were uncovered to continue the cooling process. Per manager, TCS foods were prepared <2 hours. Discussed proper cooling methods with manager. (B) When placed in cooling or cold holding EQUIPMENT, FOOD containers in which FOOD is being cooled shall be: (1) Arranged in the EQUIPMENT to provide maximum heat transfer through the container walls; and (2) Loosely covered, or uncovered if protected from overhead contamination, as specified under Subparagraph 3-305.11(A)(2), during the cooling period to facilitate heat transfer from the surface of the FOOD. Inspector's notes

On cook line, employee handled raw shell eggs with gloved hands, then handled plate and other ready to eat food items without a proper handwash after handling of raw eggs. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands are to be washed at any time contamination occurs and when changing tasks. Discussed the importance of proper hand washing procedures with the person-in charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Corrective Action: Corrected at time of inspection.

Backflow must be tested yearly. Maintain certificates on site for verification. 2) Install an evaporator pan for condensate from display cooler; drain line is currently running along floor with no way to keep an air gap. 3) Plug drain for drip pan to coffee kegerator; pan cannot drain into a container. Otherwise, plumb kegerator to floor sink under soda tower. 4) Re-plumb drain line from soda tower so it is hard piped, sloped to drain, with a 1” air gap at floor sink.
