Observed a container of Young's Kitchen and Bathroom scrub stored on the prep table in the back of the facility. Discussed approved use of sanitizers with the person-in-charge (PIC).Young's Kitchen and Bathroom scrub is not an approved chemical sanitizer under 40 CFR 180.940. Inspector did not observe the use of this chemical at time of inspection. Establishment must cease use of this chemical as a sanitizer and start using a chemical listed under 40 CFR 180.940 for food contact surfaces. Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Discussed with PIC chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemical was relocated and properly stored and the prep table was properly soap, rinsed and sanitized with approved sanitizer by PIC at time of inspection. Observed at the hand wash sink next to the soda machine to be without soap. Discussed with PIC all handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC supplied hand soap at the time of inspection. Also observed a dirty mop head stored on the splashguard of the hand sink in front of the freezer. Discussed with PIC hand wash sinks shall be used for hand washing only and shall be clean and accessible to promote proper hand washing. Corrective Action: Corrected at time of inspection.

Observed in the top part of the prep table to have pizza sauce with an internal temperature of 50*F. Per PIC the pizza sauce was placed in the unit less than 4 hours prior to inspection. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC put sauce in freezer to rapidly cool. Discussed with PIC observation was the top of prep table has space for more containers but was left open leaving the cold air to escape. Discussed if not all the space is needed, place empty containers to help the unit maintain the correct temperature of 41*F or less. Corrective Action: Corrected at time of inspection.

While the food operational permit is approved, obtain Maricopa County Planning and Development approval prior to opening/operating.Correct the following items prior to your routine inspection:1) Provide split toilet seats for all restrooms.2) Make all restroom doors self-closing (door closures installed but not adjusted to a point of self-closure at time of inspection).An ASSE 1022 has been installed as backflow protection for the soda system. This must be replaced every year at minimum (September). Otherwise, install an RPZ (ASSE 1013) and have it tested every year.No County legal action will result from this inspection.Report emailed.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services.
