Observed red enchilada sauce in walk-in cooler at 50*F. PIC stated that it had been prepped the day before. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Discussed with PIC different cooling methods such as ice wands, shallow pans, and utilization of cooling logs. Observed pans of refried beans in front of the walk-in refrigerator with an internal temperature of 90*F to 110*F measured with a probing thermometer in the middle of each pan. Per PIC the items were just recently cooked 1 hour prior to inspection and placed there to cool before placing in the walk-in refrigerator. Discussed with PIC proper cooling methods are TCS foods reaching internal temperature of 135*F proper cooling shall occur in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Also discussed cooling parameters of cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Per person in charge (PIC) both items were made the previous day and were in the walk-in refrigerator overnight. Discussed with PIC cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Observed prep table on the cookline across from the reach-in freezer with an internal temperature of 54*F in the top and bottom of the unit. Per Person in Charge (PIC) the TCS items in the unit for more less than 4 hours were the hard-shelled chicken and beef tacos. They were relocated to the refrigerator to rapidly cool. The TCS items in the bottom part of the unit that were in the unit for more than 4 hours were the chicken chimichangas and the beef chimichangas. Discussed with PIC Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Embargoed the chicken chimichangas and the beef chimichangas and PIC discarded at time of inspection. Non-TCS items such and bread and tortilla were kept in the prep table unit. Discussed to not utilize the prep table until it is able to maintain a temperature of 41*F or less. Facility has adequate refrigeration. Corrective Action: Corrected at time of inspection.
