-- In middle section of reach-in refrigerator with a damaged gasket seal, observed cooked carnitas, carne asada, Chile rellenos, al pastor (marinated pork), and cabeza with internal temperatures ranging from 45°F-50°F. All other TCS items cold holding at 41°F or less in unit. The PIC stated they just prepared orders with the items approximately an hour prior to the inspection. All TCS foods improperly cold held were relocated to the walk-in freezer rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

The person in charge (PIC) stated the items were prepared on those dates and placed in the freezer. The PIC stated the items were removed from the freezer 1 day ago. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
