Observed container of battered raw chicken with an internal temperature of 48-50F. PIC stated chicken was put in prep fridge unit from reach-in cooler three hours prior. PIC did not know why the chicken was warm, unit ambient temperature reading 41F. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the following time/temperature controlled for safety with the following listed prep and discard dates: cooked beans (6/26-7/2), cooked poblano peppers (6/20-6/27; discussed day of prep as day 1, plus 6 days for holding), cooked tinga chicken (6/26-7/2), chipotle sauce made with chipotle peppers removed from hermetic seal (6/24-6/30), and cooked carnitas (6/24-6/30). Also observed cooked chicken wings and RTE/TCS sauces portioned in smaller bottles without a datemark. Person-in-charge (PIC) datemarked sauces and also stated chicken wings are to be discarded today. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Wall tiles behind the draft beer area will be glossy ceramic tiles with Schluter-dilex cove base.2. Hand sink in the brewery will be to the left of the mop sink and will directly plumb to the sewer.3. Keg washer equipment must drain indirectly to the floor sink with minimum 1” airgap from the finished grade.4. Small / removable equipment parts will be wash, rinse and sanitize inside the bar’s 3-comp sink.5. Vinyl cove base will be used behind the bar. Please seal the bottom of the base to the floor.6. Metal cove base will be used outside of the walk-in cooler.7. Provide a designated cold storage area inside the walk-in cooler for the taco’s facility.8. Siliconized grout will be used to tool a 3/8” radius cove base inside the restrooms.9. Ceiling for the restrooms and kitchen must be white.10. Catalyst Bar, E&D, class 2 10+This inspection was scheduled with the GC on last visit. There were tile installers on site at the time of inspection. Permit is not approved.Manager and person in charge must be a certified food protection manager and must be at the site during all operational hours. Food handlers must have food handler certificates. Please address the following items to be approved:1. Provide a reduced pressure zone (RPZ) assembly (ASSE 1013) at the water connection point of the mister system. Provide a drain cup for the vent port of the RPZ. 2. Provide another RPZ at the water connection point of the glass rinser if one will be provided.3. Provide a spill resistant vacuum breaker (SRVB) (ASSE 1056) 12 inches above the water connection point of the sprayer hose.4. Certify all testable backflow preventers and provide reports. 5. Provide chemical dispensers with internal built-in air gap (ASSE 1055A) if they will used.6. Provide a 3 -comp sink at the bar. Sink must have hot and cold water and the faucet must be able to reach all 3 compartments. 7. Drainpipes must be rigid. Drainpipes from 3-comp sink, equipment, backflow preventer, glass rinser, work / dump sink, walk-in units, etc. must be rigid, slope to drain at ¼” per foot and indirectly discharge to a floor sink or floor trough. Direct connection for these fixtures are not acceptable.8. Provide a hand washing sink in the bar and inside the brewery.9. Provide a mop sink inside the brewery. 10. Provide FRP backsplash at mop sink. Ensure mop sink is not within 24 inches of all dry storage, work area, equipment, etc. Pony wall enclosures can be built to prevent splashing from mop water.11. All sinks must have hot and cold water and available at point of service within 45 seconds. A recirculation pump can be used to achieve this since the water heater is over 60 feet away from the brewery side.12. Provide 3/8” radius cove base inside restrooms, bar, brewery processing area. Noted restrooms do not have the required cove base. Straight base is not acceptable.13. Provide 3/8” radius metal cove base outside of the walk-in cooler.14. Provide ¼” radius coving inside the walk-in cooler.15. Provide several coats of marine grade sealant on the concrete floor inside the walk-in unit. Water must bead up on the floor.16. Fill low grout on floor tiles inside the brewery. Grout must be flushed with the same level of the floor tiles. Please use siliconized grout for flooring inside bar, brewery, and kitchen. This also includes storage areas.17.
