Observed manually mixed chlorine bleach sanitizer solution with 200 ppm concentration. PIC stated this was the method for manually mixing all sanitizer solutions in the facility including food contact surfaces. Chlorine sanitizer must be used at concentrations of 50-100 ppm and/or in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Discussed approved use of sanitizers with the person-in-charge (PIC). Corrective Action: Corrected at time of inspection. 7-202.11 - Priority Foundation: Restriction-Presence and Use Addl Notes: Observed insect killer bottle on floor of ice machine room. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.

Observed ice freezer with broken seal around door which was held closed with boxes of product, as well as storage cabinet doors with loose hinges: one under self-serve beverage station and one under coffee station. All equipment must be maintained in good repair at all times. PIC was advised to retain an invoice upon repair. Repair all equipment to a state of good repair prior to next routine inspection. Observed half and half creamer in a dispenser with an internal temperature of 45*F. The person in charge indicated the half and half had been in the dispenser for more than day and they do not verify the internal temperature. The measured ambient temperature of the unit 39.7*F. Discussed verifying the internal temperature of the half and half to assure it is holding at 41*F and below; person in charge indicated they may replace the unit because it is old. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
