Inspector's notes
Observed an ambient air temp at 44*F when measured with a min/max thermometer. Inside the cooler, observed TCS foods including cut tomatoes, cooked onions, cheeses, sausages, cooked shrimp and sauce with internal temperatures ranging from 45-50*F when measured with a probe thermometer. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Discussed with PIC increasing cleaning frequency on bar soda nozzle holders.
Inspector's notes
In the cold top on the right side of the cooks line, observed small metal containers of diced tomatoes, pico de gallo, cooked onions, shredded cheddar and mozzarella cheese, a medium metal container of cooked pasta with an internally probed temperature range of 49-60 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC (person in charge) stated pasta was placed in cook top an hour prior. Pasta was relocated to the walk-in cooler to cool to 41 degrees F. All other TCS items improperly cold held were discarded by PIC. In the reach-in of the same cold top observed a large metal container of sausages with an internally probed temperature of 50-52 degrees F. PIC unsure how long items were in the cooler. PIC discarded the sausages. Corrective Action: Corrected at time of inspection.

Observed a final rinse sanitizer concentration of less than 10ppm at the bar dishwasher. PIC discovered the supply bucket had almost empty and the supply line was not pushed to the bottom of the bucket. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC pushed the supply line further into the supply bucket and primed the line. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.
