Observed 10ppm chlorine sanitizer in the 3 comp sink where active warewashing was occurring. PIC stated the compartment was filled with 1 pump of chlorine sanitizer concentrate and hot water. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (50-100ppm chlorine). PIC added two additional pumps of sanitizer to the now room temperature water to obtain a 50ppm chlorine sanitizer concentration. Corrective Action: Corrected at time of inspection.

The permit holder is responsible for ensuring that their menu items comply. Education was provided on the addition of food additives and dietary supplements during the inspection. PIC stated they were not trained what chlorine levels to maintain or how to test sanitizer. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels (50-100ppm). Ensure each batch of sanitizer is checked with a chemical test strip after mixing. PIC added additional chlorine and remeasured at 50ppm. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.
