Inspector's notes

Observed cooling past measuring 45-58*F, internally in a large tightly covered metal pan. Per PIC, the pasta was cooked and cooled in a ice bath before placing in the walk in approximately 4 hours prior. All TCS foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Advised PIC to record temperatures in multiple areas to ensure even cooling has been achieved. Corrective Action: Corrected at time of inspection.

Person-in-charge (PIC) relocated all food-contact surfaces to warewashing area in kitchen to be washed, rinsed, and sanitized at the time of inspection. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Informed PIC that bar dishwasher cannot be used until sanitizer levels are between 50-100ppm Chlorine. Spoke with person in charge regarding cleaning procedures for large cutting boards on cold top. Advised if TCS foods are coming in to contact with the cutting boards they need to be washed, rinsed, and sanitized every 4 hours. Advised person in charge can use wax paper or their smaller cutting boards to put food on to prevent TCS foods from coming in to contact with the surface of the cold top. All time/temperature control for safety (TCS) foods were reheated to 165 degrees.
