Observed no hand drying provision at hand sink near register at time of inspection. PIC provided hand drying provision for handwash sink at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Observed deep covered containers of marinated chicken(47'F), marinated katsu chicken(60'F) and marinated steak (62'F) stored in establishments main walk in unit with an ambient temperature of 41'F. Also observed deep covered container of in-house salsa (70'F) made with roasted tomatoes in prep cooler located near handwashing sink. Per PIC items were prepped around noon. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered and transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Observed in-house salsa made with roasted tomatoes (74'F) stored at ambient air temperature on food prep counter located by take-out window. Observed cheese mix (51'F) in ice bath stored on food prep table located across cookline. Ice bath observed in melted ice at inadequate amount to support proper coldholding temperature. Ensure ice bath is continuously topped up with ice to maintain coldholding temperatures. PIC stated both items were brought out of refrigeration less than 4 hours prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed walk-in unit in disrepair at time of inspection. PIC stated unit had malfunctioned the day prior and all food items were properly disposed of. No items observed stored in walk-in unit at time of inspection. The establishment has adequate cold holding capacities to continue normal operation. Cold holding units must hold temperature at 41'F or below. Discussed with PIC to continue using smaller walk-in unit on the other side of the establishment to support adequate storage; and to continue refraining from using the faulty unit until it has been fixed. Walk-in unit will be serviced later today, per PIC. Corrective Action: Correct prior to next routine inspection.
