Inspector's notes

Observed cooked whole potatoes in a deep container at a temperature of 90 F in reach in fridge located in an area behind the cash register at 10 am. Label on container displayed that potatoes were placed in fridge at 8:30 am this morning. PIC was informed that TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC added ice to the container to rapidly cool the potatoes. Observed a temperature of 65 F at 10:22 am. Corrective Action: Corrected at time of inspection.

All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Inspector's notes

In one of the prep coolers, observed cut lettuce, cut tomatoes, roast beef, chili (beans/beef), Swiss cheese and sauerkraut having internal temperatures of 48-53*F. Person in charge (PIC) states they checked the food/unit less than 2 hours prior to inspection and were in an appropriate temperature. Unit was observed to be disconnected from the outlet which was caused by accident during closing cleaning. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Establishment has enough cold holding units to continue normal operation even with this unit out of order. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
