Observed establishment using time as a control for pizza sauce, stored at ambient temperature on cold prep table. Pizza sauce observed without time stamps. Establishment uses digital timer equipment to indicate 4-hour time control. Digital timer observed not turned on and in disrepair. Pizza sauce was put on time as a control at 11am, per PIC. PIC properly time stamped pizza sauce at time of inspection. Informed PIC time stamps are a viable alternative and can be used when digital timer is not working. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Corrected at time of inspection.
