Inspector's notes

Observed in the walk-in cooler 2 buckets of cooked chicken soup at 51°F as measured on a calibrated probe thermometer. Per PIC, items were cooked and placed in the walk-in at 9:30 pm the previous night, over 6 hours from time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Discussed proper cooling methods with PIC, including cooling soups in shallow pans (less than 4 inches deep) and placing cooling containers on top shelves in front of the walk-in fan to encourage faster cooling. PIC was given handouts. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd consecutive violation.

To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Please note that if you select payment via online, the annual operating permit fee invoice may take up to 7 business days to post online. Also, checks and money orders are accepted via US Mail. If you select payment via US Mail, for further instructions please refer to the printed invoice. No operating permit is valid, until the permit fee is received by the Department. Advised person in charge (PIC) that areas above food prep/cooking shall have adequate lighting to ensure proper cleaning. PIC stated they will have the light bulbs replaced as soon as possible. Core-4-204.11, C: Ventilation Hood Systems, Drip Prevention Observed fryers outside of baffled area under canopy hood. Advised person in charge (PIC) that cooking equipment shall be enclosed within hood canopy to ensure proper ventilation. PIC stated they will have the fryers moved to underneath baffled hood canopy.
