Observed shrimp thawing from a frozen state in a 5 gallon bucket in the three compartment sink in still water. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Cold water was turned on and TCS shrimp was thawing properly at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed red salsa by the drive thru window at 54*F and red salsa in the salsa bar at 48*F at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, salsa was taken from the walk in less than 4 hours prior to the time of inspection. PIC added ice on top of salsa containers and added ice to the salsa bar to rapidly cool TCS product down to 41*F at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed unlabeled spray bottles, one with blue liquid and one with brown liquid. PIC stated the contents of the bottles were window cleaner and grill cleaner, respectively. Had PIC move knife to three-compartment sink to be washed and sanitized; discussed keeping in-use knives in a manner such to prevent contamination. Additionally observed ice scoop sitting on top of the ice machine; discussed keeping the scoop in a cleanable container in-between use to prevent contamination. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food.
