Observed carafe of milk at 50F at 8:25am. Person in charge states it has been on the service line since 6:00am. Suggested placing milk into refrigeration unit for rapid cooling, PIC chose to discard milk instead. Discussed having alternate milk carafe and/or ice wands to swap between service line and cooler for better temperature management. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

OC re-inspection for a Class 3 10+ E&D permit was conducted with on-site staff at time of inspection. No management was present at time of inspection. The establishment is still approved to operate. Please address the following items prior to the next OC re-inspection within 10 days: 1) Install a separate, dedicated prep sink for washing apples or remove apples from the breakfast service. The prep sink must be indirectly plumbed to a floor sink with a 1" minimum air gap and provided with hot and cold water. 2) Provide 1" minimum air gaps for the ice machine drains above the floor sink flood rim. 3) Replace the torn refrigerator door gaskets, as needed. 4) Replace all corroded and rusted floor sink grates. 5) Provide a 3/8th inch minimum cove to the floor/wall and millwork/floor junctures throughout the front service area. Recommend a finger/tool cove with siliconized grout. Please be advised that the New Business Permit Application fee includes one initial inspection and one follow-up inspection. OC inspection for a Class 3 10+ E&D permit was conducted with general manager Jeffrey J. by appointment. The establishment was open and operating at time of inspection. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2.
