Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation. - Observed cream cheese danish and pastries with sliced tomatoes at 72 deg in front display area. Per person in charge items are brought in every morning at 7:45 am and are discarded before closing at 11:45 am. Did not observe time stamp or time as a control policy. Employee time stamped products and PIC was provided sample time-as a control policy to use. When using time as a public health control with out temperature control written procedures must be available and the food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control.
