Observed in-use chlorine dish wash machine measuring less than 25ppm. Discussed manually rewashing dishes in 3-compartment sink and sanitizing using chlorine sanitizer at appropriate concentration. Establishment will use 3-compartment sink to manually wash dishes until dish wash machine has been serviced and concentration measures 50-100ppm. Ensure staff are regularly checking sanitizer concentration daily. Corrective Action: Corrected at time of inspection.

Location is an exiting restaurant (Claim Jumper) that will be converted into a seafood buffet.Stopped by the location and walk through the construction site to assess and see if a remodel was needed. After talking to the ownership found out that expedited remodel had been filed but that it was missing spec sheets. Ownership will submit the missing material so the permit can be reviewed.No County legal action will result from this inspection.
