#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cupped ranch, chopped lettuce, chopped hard-boiled eggs, and cheese with internal temperatures ranging between 60°F and 65°F in prep cooler drawers. Manager stated the drawers had been left open for morning food prep, about 2 hours prior. The prep cooler was found to be unplugged; manager stated they had moved the cooler for cleaning earlier. Manager instructed staff to move items to walk-in freezer for rapid cooling. Discussed increasing line temperature checks, especially if equipment is moved. Unit was plugged in and ambient air measured 41°F at the end of the inspection. Corrective Action: Corrected at time of inspection.
