Inspector's notes

Observed TCS food items being held on the bottom shelf of a reach in cold holding unit with attached walk-in. Walk-in contained a wall of beer boxes that blocked air flow to TCS food items. Internal temperature of TCS food items taken with internal probe thermometer registered between 44-51*F. TCS food items included: Bologna, shredded cheese, raw bacon, chorizo sliced cheeses and yogurt. All TCS foods improperly cold held were discarded by PIC at time of inspection. Employee will reorganize the walk-in to facilitate better airflow. Corrected at time of inspection.
