#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS food items being hot held in a case with an internal temperature of 112-125*F. Internal temperature registered with an internal probe thermometer. TCS food items included cooked chilis, cooked chicken, beans, rice, and Caldo De Res. Per PIC all hot food had been on the line for less than 2hrs except the Caldo De Res which was placed on the hot line that morning. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC discard the Caldo De Res and all TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrected at time of inspection.

Inspector's notes

Observed an in use hot holding case with two missing doors and plastic taped over the openings. The case's water bath is holding temperature at 135*F all TCS food temped in case at 135*F or above. Internal temperatures registered with an internal probe thermometer. Per PIC the owner had removed the doors the day before the replace them due to damage. Per PIC the owner will be returning at a later date to replace the doors. Educated PIC that all equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Correct prior to next routine inspection.

Observed TCS foods held in walk-in refrigeration unit in deep, stacked, metal pans on stuffed shelves. Per PIC all foods had been cooked and prepared 24hrs ago. Internal temperature of TCS foods taken with internal probe thermometer registered 44*F-46*F. TCS foods included cooked salsas, cooked beans, cooked rice, cooked barbacoa, and cooked chimichangas. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrected at time of inspection.
