Plastic container of fried chicken pieces next to fryer measured 74 degrees F internally. Employee said that it had been there for over an hour and was left out waiting to be recooked when ordered. Set up time as a control policy to ensure item is discarded if it lasts longer than 4 hours. Additionally, raw beef was soaking in container on 3 compartment sink, beef measured 76 degrees F. Employee said it was being cleaned before getting frozen and had been out for about an hour. Instructed employees to finish this task and moved beef to walk-in as soon as possible. Please ensure all time/temperature controlled for safety food items are maintained at 41 degrees F when not being actively prepared. Corrective Action: Corrected at time of inspection.
