Fried chicken, and fried tofu in reach in cooler measured 72 degrees F while being stored in plastic bags. Person in charge said they had been cooling on counter for nearly 2 hours before being bagged and put in cooler. Items were moved to open shallow containers and returned to cooler at time. Please ensure all time/temperature controlled for safety food items are cooled in shallow, uncovered containers (and moved to enclosed cooling equipment once steam has stopped) to allow for most efficient heat transfer. Corrective Action: Corrected at time of inspection.
