Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Observed tongs stored hanging on pipe next to fryer and spatulas hanging from nail on wall next to stove. PIC reports having cleanable magnetic buckets for storing in-use utensils near workstations, will install as soon as possible. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Correct prior to next routine inspection.

Raw chicken kebab sticks were wrapped and placed on tray on the shelf above. Covered pan of raw beef in question was covered with saran wrap; as protection per PIC. PIC stated the kebabs were stored on the higher shelves for a catering order that is being fulfilled and cooked in the chicken and that the kebabs will be gone before the end of day.
