An Active Managerial Control Intervention Visit was offered to the person in charge. Establishment prepares and serves open TCS foods. No CFPM onsite at time of inspection. A CFPM is required onsite during all hours of operation. Per PIC, vegetables were cooked the day prior to inspection. The cooked vegetables were embargoed at the time of inspection. Discussed proper cooling with the PIC. Foods must be cooled from 135'F-70'F in the first 2 hours and from 70'F-41'F in the next 4 hours for a total of 6 hours. Repeat violation. This is the second consecutive violation. Per PIC, all items were prepared the day prior to inspection and are packaged for individual meals for customer pick-up. Discussed date marking and labeling requirements. Items must be labeled with use-by date of 7 days (including date of preparation at day 1). Provide date marking procedures for packaged meal items prior to re-inspection on 11/20/2023.
