In the customer area, observed a display shelving unit for displaying baked goods without any protective shielding. Observed four unwrapped baguettes on the shelf. Also observed and uncovered cookie platter. Provide approved protective guards/cases for unpackaged foods offered for sale in customer area. PIC provided cover to the cookies and removed the unwrapped baguettes at time of inspection. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed sliced tomatoes on the prep table cutting board measured to be 53°F by probe thermometer. Tomatoes had a small amount of ice and a large amount of melted ice underneath. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, tomatoes had been kept out during the lunch rush for two hours. The ice was to keep it cool but was not sufficient. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
