Observed with min/max thermometer small Hoshizaki refrigerator with ambient temperature of 46*F-50*F. Inside tcs foods were: 46*F-51*F- various milk; half and half; butter and sour cream dairy products. Notified Person In Charge (PIC). PIC moved all tcs foods to another working unit to cool to below 41*F. Verified after 45 minutes. Establishment is taking temperature check at 6am. Time is after 12pm. ======Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection. Corrective Action: Corrected at time of inspection. 2nd Consecutive violation.

During food preparation employee will need to wear gloves to prevent possible contaminants. =====Employee working with exposed food with rough fingernails; or wearing fingernail polish without a glove; or wearing artificial nails without a glove. Observed main sandwich line unit with ambient temperature with 2 min/max thermometers reading unit at: 50.3*F-53.8*F. Notified Person IN Charge (PIC). Inside the three door unit was: 13 prepared variety salads placed into the unit at 10:30am. Time of inspection is after 1:30pm. Internal temperature of prepared salads was: 48*F - 58*F. PIC placed all prepared salads into main walk in unit to cool to below 41*F. Verified after 30 minutes. Per PIC the salads are prepared earlier in day and placed into main walk in. ===Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law 2) Install an RPZ (ASSE 1013 – such as a Watts 009) backflow preventer on water line to soda system. Run a drain line from vent of backflow preventer to a floor sink or the mop sink with a 1” air gap. Have backflow tested after installation. Backflow must be tested and passed yearly. 3) Atmospheric vacuum breaker at mop sink is leaking, has failed. Repair or replace. 4) Install an ASSE 1022 backflow preventer on all water lines to coffee/tea brewers. 5) Repair all leaks at prep sink faucet, or replace faucet. 6) Shorten drain lines in front service area at ice bin. If second unknown line is unnecessary, remove. 7) For drain from walk-in units, install a p-trap in drain line to prevent entrance of pests. Also create a French drain by providing 1-2’ cube of pea gravel under the drain (in the earth) outside so that water drains and evaporates easily. Correct By: Correct Prior To Reinspection
