At breakfast bar, observed individual cream cheese packages/64F and butter/64F being held in ceramic containers. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The foods were within safe time parameters and were relocated to an alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Emailed operator guidelines for using time as a control. Corrective Action: Corrected at time of inspection.

At breakfast bar, observed individual cream cheese containers/66F being held in containers with a cold plate at the bottom. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Discussed options of using ice, smaller quantities of product, a different refrigeration unit, etc to maintain proper temperatures. The cream cheese packages were within safe time holding parameters and were relocated to a refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
