To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Cap wall exit and run the drain line of the prep sink along the wall, at least 6 inches above the floor to the floor sink behind the ovens, properly brace, follow gravity flow and provide at least an inch air gap through an elbow down into the floor sink. Stopped by the store to look at where the new prep sink will be located. The sink will be located to the south of the ovens.The sink will be required to waste to the floor sink behind the ovens.Make sure the plumber runs the drain line to the back wall first and then over to the floor sink along the wall. Properly brace, maintain gravity flor and a 1 inch air gap at the floor sink.Planned start date Oumi Sushi is April 5th.No County legal action will result from this inspection.E-mailed inspection report
