Several spoons used for cooking were being stored in a container of room temperature water. Person in charge removed water from container. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Predefined Comment: Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Repair cold holding equipment such that it maintains TCS foods at 41°F or below. Per PIC, foods in cooler were recently prepared within the last 2 hours. Recently prepared foods were in the process of being relocated to walk-in cooler for rapid cooling. Do not use unit to house TCS foods until unit can maintain foods internally at a temperature of 41*F or below. Corrective Action: Corrected at time of inspection.
