Store is not in operation at this time.This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation violations on this inspection.This location will be serving a mix of Mexican Kitchen with the Japanese kitchen.For the sushi rice, time as a control will be used. Make sure to create a document specifying the procedure and create a log sheet showing date, time of rice creation and discard time with initial.If you serve any raw fish in the sushi then make sure to have freezing records on site for these fish showing that the fish was frozen for 7 days at -4 degrees Fahrenheit. Menu is in development. On the menu, make sure to mark each item that contains raw fish with an * and create a note at the bottom of the page stating the same * followed by " This item contains raw fish. Please note that consuming raw or undercooked food items increases your risk of contracting food borne illness" or something similar.Location does not have a freezer at this time, please provide a commercial freezer.Location will not serve soda from a fountain.This establishment/operation has been evaluated and qualifies for the issuance of the permit.
