Internal temperature of 56*F for the following Time/temperature control for safety (TCS) foods (Ham, Pastrami, Capicola) stored in refrigeration drawers located at cook line. Discussed with operator any TCS foods that have been stored in refrigeration unit for longer than 4hours is no longer safe for human consumption. Per operator, temperature of 41*F or below was verified at 8am this morning. Operator to remove all TCS foods and stored in walk-in refrigeration unit at time of inspection. Inspector's notes

Observed various Time/Temperature Control for Safety (TCS) food items inside a prep-top style refrigeration unit including various deli meats, cooked pasta, and heavy cream registering internal temperatures ranging between 45°-50°F with a probing thermometer. Per manager, the food items were in the unit between 1-2 days prior to the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The manager voluntarily discarded the food items at the time of inspection. Corrective Action: Corrected at time of inspection.

Person in charge (PIC) transferred sauce to large saucepan and reheated on stove to 165F to hold hot at 135F in steam table. Per PIC, sauce was placed in steam table for holt-holding less than 2 hours prior to inspection. Inspector verified reheating temperature with probe thermometer.
