Observed sliced tomatoes at 53*F in the cold holding unit to the left on the line, with an ambient air temperature using a min/max thermometer of 55*F and prepped yesterday. Observed prepackaged steak, prepackaged rotisserie chicken, prepackaged meatballs, prepackaged guac, prepackaged cut lettuce, milk, sliced tomatoes, cut lettuce, prepackaged pepperoni, prepackaged turkey, cooked chicken, cut spinach, prepackaged salami, prepackaged roast beef, and prepackaged ham with a temperature range between 45-47*F located in the walk-in cooler, ambient air temperature taken with a min max thermometer was 49-51*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
