Inspector's notes
Observed chicken soup at 109*F in the middle soup well on the retail floor for consumer self-service. Per PIC the soup had been in the well for two hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Please ensure the well is serviced by a professional technician. The establishment will not use the middle soup well in the meantime. Corrective Action: Corrected at time of inspection.

Proper thawing consists of putting the frozen product in the walk-in or in the prep sink submerged under running water. PIC placed the chicken into a bowl and turned on the faucet.
