Observed shrimp, chicken and beef stored in tall pans in walk in cooler on same shelf. Different meat types need to be stored with space/dividers between types or on separate shelves to prevent any cross contamination. No actual cross contamination was present at time of site visit. Corrective Action: Correct prior to next routine inspection.

Observed rice noodles in walk in cooler on rolling rack by door at 44-45*F. Product was embargoed and discarded. Observed tempura shrimp, fried and cooled pork, and wontons in small prep cooler at 58*F. Items were embargoed and discarded. Advised staff to routinely check food temperatures throughout kitchen with a metal stem thermometer. Second consecutive violation Corrective Action: Corrected at time of inspection.

Observed Tempura shrimp in small single door refrigerator at 47*F, in same refrigerator observed orange chicken at 90*F. As per the person in charge orange chicken was heated approximately 60 minutes before inspection and placed next to ready to eat tempura shrimp in small single door refrigerator. Cold hold of food to be 41*F or cooler. Advised person in charge to not cool foods in service refrigerator during meal rushes when doors are opened and closed to fill orders. Cool large portion in walk in cooler and keep smaller near prep area. Both items were placed in walk in cooler to cool back to 41*F.

Observed knife stored between counter height refrigerator and prep cooler in kitchen across from grill. In use utensils must be stored on a regularly cleaned and sanitized surfaces. Knife was removed, washed and place on prep table between use. Corrective Action: Corrected at time of inspection.
