Prep cooler along grill line with an internal temperature of 52*F and ice build up along back inside wall of unit. Equipment is to be maintained so it holds food at 41*F or lower. Person in charge placed work order for repair. Advised to inplug and defrost and plug back in to see if unit can hold food at 41*F. Ice bath is currently be used to keep food cold and staff will replace items every 4 hours. Items include Shredded lettuce, tomatoes , cheese. Corrective Action: Correct prior to re-inspection.
