Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one (1) Certified Food Protection Manager (CFPM) on staff. The Person in Charge shall be a CFPM and is required to be onsite during the hours of operation. Please obtain certified food protection manager certification and keep certification accessible for health inspections. Corrective Action: Correct prior to next routine inspection. Predefined Comment: Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. The cocktail was discarded at time of inspection. Bartender utilized tongs for handling RTE food after instruction. Corrective Action: Corrected at time of inspection.

Observed cooked pasta/44-49°F in tightly wrapped plastic bags in the bottom section of the salad station prep refrigerator. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the chef it was determined the pasta had not been in the prep refrigerator all day today. The time the cooked pasta was stored above 41°F could not be readily determined.

No thermometer in salad station prep refrigerator. Digital thermometer on the salad station prep refrigerator is located on the back of the unit placed alongside a wall. Thermometer stored in flatbread station prep refrigerator displays a minimum temperature of 100°F (thermometer for oven). Any refrigerator or freezer, storing TCS food products, shall have a thermometer located in an inconspicuous place. Obtain thermometers for cold holding units prior to the next routine inspection. Met with Owner and previous Owner to discuss plumbing layout and backflow preventer requirements/locations due to restaurant's reverse osmosis water filtration system connected to distillery.Please complete the following prior to reinspection:1. Label direction of plumbing flow and connected components for plumbing system. Provide an updated labeled schematic of plumbing system.2. Provide a one-inch air gap below the large RPZ backflow preventer in the storage room.3. Replace the flex line from the water softener discharge in the storage room with rigid line, such as PVC. Install a hub drain for drain outside storage room door. Route rigid drain line to hub drain and provide a one-inch air gap for the PVC drain line above hub drain. 4. Install a Hose Bibb vacuum breaker backflow preventer at water hose faucet at north side of outside dining5. Replace copper plumbing downstream of RO water line in distillery with stainless steel or pex lines.6. Remove unused equipment outside distillery.Identifying plumbing flow and components will assist in where the backflow preventers will need to be installed for the misting system and RO system.
