RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.

Also discussed the date marking on TCS items frozen and thawed shall be marked for less days. 2) a covered garbage bin shall be included in the women's bathroom. 3) Hand washing shall occur, after handling dirty dishes, touching order screen/personal phone or anytime contamination occurs.

Observed sanitizer bucket in the back of the facility with 0ppm of chlorine sanitizer. Also observed wet sanitizer wiping cloths stored outside of sanitizer buckets between uses. Discussed with PIC all sanitizer buckets of bleach shall be 50ppm to 100ppm and wet wiping cloths shall be stored, submerged in sanitizer in between uses. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed purple cooked boba sitting on the center island of the front prep area with an internal temperature of 105*F. Per Person in Charge (PIC) the boba was placed out of the heat source at 11:30am. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Assisted PIC with putting boba under a Time as Control for Safety (TAC) policy and operator placed a time tag on the batch marked 11:30 to 3:30. Corrective Action: Corrected at time of inspection.

Establishment was not open and operating at the time of inspection. ***Discussed submitting for a minor remodel if a pitcher rinser will be installed in the future. Discussed backflow requirements with Izaiah Q. This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. OC Inspection conducted with owner Izaiah Q. Establishment is not open and operating. Permit not yet approved.***Establishment is waiting on a freezer and drink sealer.Correct the following items prior to reinspection on 3/18/2024:1) Provide a new 50-gallon hot water heater. There was not hot water at the time of inspection. Per owner hot water heater is on order.2) Provide an ASSE 1022 dual check valve backflow preventer upstream of the hot water dispenser unit. 3) An RPZ backflow device (ASSE 1013) will need to be installed upstream of any blender rinsers. Establishment will not be using a blender rinser at this time but may install one in the future. Discussed applying for a minor remodel for the blender rinser. 4) Repair the drain lines for the prep sink.5) Provide a rigid drain line for the ice machine and ensure drain line terminates at a floor sink with a 1-inch air gap.6) Provide hot water to the front prep sink. Prep sink must have hot and cold water. Prep sink must also have a standard faucet (not just a sprayer). Provide a rigid drain line and terminate to the floor sink. 7) Ensure all hand sinks have a hot water temperature of at least 100’F and all other sink fixtures must have at least 100-110’F of hot water. Hot water must reach all sinks within 45 seconds. 8) Ensure all cold holding equipment is on and holding at 41’F or below.9) Ensure all equipment is NSF/ANSI certified. 10) Silicone/caulk in the gap underneath the wall and paint the exposed wood with a semi or high gloss paint. Light in color. No County legal action will result from this inspection.
