Observed pasteurized liquid eggs stored beneath raw beef patties in reach in cooler next to grill. PIC relocated eggs to shelf above raw beef. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed cooked eggs and sausage bits in containers on the grill with temperatures between 99 to 111*F at time of inspection. Per cook, both items were placed in hot holding containers less than an hour prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed cold brew and cream in pitchers with temperatures between 51 to 53*F in a reach in fridge next to the ice cream machine at time of inspection. Per PIC, all items had been prepped the day prior to inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Observed ambient temperature of the reach-in at 51.4*F at time of inspection. PIC stated that the establishment will discontinue use of reach-in until it is able to maintain TCS food items at 41*F or below at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
