Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

The person in charge (PIC) restocked all soap and paper towel. Discussed with PIC Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing, sinks are maintained as accessible and not blocked and hand wash sinks shall only be used for washing hands. Corrective Action: Corrected at time of inspection.

Observed Reduced Oxygen Packaging (ROP) in kegs of cold brew dated to be held for 5 days. Discussed with PIC ROP of a TCS item shall be held for 48 or less. Observed 1 keg made on 11/9 and per PIC it was kegged on the 10th. Discard date would have been the EOD on the 11th. Embargoed cold brew and PIC voluntarily discarded at time of inspection. A variance/HACCP must be obtained prior to conducting any specialized processes. Variance/HACCP applications are available through the customer portal "Permit Center" at https://maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.
