Discussed with PIC that uncovered/unprotected food that is left out increases risk of contamination and pathogen growth. Cut bananas are a TCS food and need to be held at 41*F or lower. Discussed with PIC the need to wrap/cover the banana, write a date when it was cut, and stored in cold-holding unit. Also discussed the risk of attracting pests if left out uncovered. PIC voluntarily discarded banana at time of inspection. Corrective Action: Corrected at time of inspection. ***A pattern of non-compliance is observed for this violation, 1st consecutive.
