Under counter refrigerator below the pizza oven malfunctioning at time of inspection. Minimum ambient temperature of the refrigerator measured at 51.2°F with inspector's min/max thermometer. Observed internal temperatures of milk and cold foams between 48-51°F.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The time TCS foods were held above 41°F could not be determined. Predefined Comment: All TCS foods improperly cold held were discarded by the PIC at time of inspection. Instructed PIC to not store TCS foods/dairy in the undercounter refrigerator below the pizza oven until it is repaired and maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.
