In enclosed components of equipment such as ice makers, they must be cleaned at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or organic matter. Observed stuffed, cooked chicken in the prep table with a date mark of 11/15, previously canned anchovies with a date mark of 11/14, and house made tiramisu with mascarpone cheese 11/13 date mark at the time of inspection. Per manager, TCS foods were placed in prep table cooler within proper time parameters. Ice baths were provided for TCS foods to rapidly cool back down to the proper cold holding temperature. Ambient temperature of prep table cooler was 45.4*F and 36.6*F, taken with inspector min/max irreversible thermometer. At pizza prep table cooler, TCS foods (raw sausage, pizza sauce, mozzarella cheese) with internal temperatures of 44*F-45*F. Per manager, TCS foods were placed in prep table cooler within normal time parameters. Cooler vent was cleaned of dust and after 20 minutes, temperatures had dropped within two degree. Monitor prep table coolers during busier times of service to ensure consistency in TCS food internal temperatures and ambient air temperatures. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Correct By: Corrected At Time Of Inspection
