Inspector's notes
Observed cheese sauce, gravy, and butter in steam table at 100-110 °F. Person in charge stated that foods had been placed in steam table about 30 minutes prior. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Steam table was adjusted to maintain 135 °F holding temperature. Corrective Action: Corrected at time of inspection.
