Observed goat cheese and pepperoni sausage with internal temperatures between 47F - 52F in the deli case cooler. The person in charge stated the cheese and sausage had been in the cooler for more than 4 hours and discarded the food items at the time of inspection. Discussed TCS cold holding temperature of 41F or below. Correct By: Corrected At Time Of Inspection

Observed deli case cooler with internal temperature of 53F as measured by inspector min/max thermometer. The internal thermometer in the cooler showed an ambient temperature of 50F. The person in charge placed a work order for service. Discussed not using the deli case cooler until it is able to cool and maintain TCS cold holding temperature of 41F or below.
