Inspector's notes

Observed quaternary ammonium (quat) sanitizing solution in use at three-compartment sink at <150 ppm active quat. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Sanitizer compartment was refilled with fresh sanitizer and all food-contact surfaces in warewashing area were re-sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Observed chicken pot pie soup with internal temperature of 117F -122F in the hot holding well by the prep line. The person in charge stated the soup had been reheated and placed for hot holding 1 hour ago. The person in charge adjusted the temperature setting on the hot holding well and removed the soup to reheat to 165F.
