At in use warewashing machine, no detectable chlorine sanitizer at dishware surfaces. Manager exchanged mostly empty sanitizer bottle with full sanitizer bottle, machine was primed and re-run with proper chlorine concentration of 50-100ppm. Discussed more frequent monitoring of sanitizer solution throughout the day, especially at start of day and after periods of inactivity. Corrective Action: Corrected at time of inspection.

At front service area steam bath, observed chili/121F and vegetable beef soup/121F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per PIC, the soup and chili were out of temperature no more than 2 hours. All TCS foods improperly hot held were reheated to 165°F at time of inspection, and the thermostat was adjusted on the steam bath. Corrective Action: Corrected at time of inspection.
