At prep table, on slicer blade, accumulation of food debris. Per employee, slicer was stored as clean. Manager instructed employee to rewash, rinse, and sanitizer slicer and blade. Discussed more frequent monitoring of slicer after use to ensure cleanliness. All food-contact surfaces are to be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Ice shall be melted off at the end of the day. All ice bins and jockey boxes shall be cleaned and sanitized prior to use each day, not just at the close of the business day.Reviewed with manager: recommended changing out of sanitizer wiping cloth buckets more frequently than every 4 hours and cleaning of slicer after use and stored.Ensure all employees working with food obtain food worker certification from ANSI certified online site.Routine inspection report was emailed to person in charge at establishment.
