Inspector's notes

Observed a shallow (<4" deep) pan with tight plastic wrap covering of cabbage coleslaw prepped at ambient temperature with an internal temperature of 70F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per person in charge (PIC), item was prepped less than 1 hour prior to inspection. Also of note: observed a pan of cooked pork that was still 180F internal temperature being cooled in a similar manner and stacked on top of the pan of coleslaw. PIC removed lids and plastic wrap during inspection to correct. Corrective Action: Corrected at time of inspection.
