Observed cooked sausage cooling in the walk in cooler, being slightly covered and having an internal temperature of 80*F. Person in charge states the sausage had been cooling for more than 2 hours prior to the inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling.

Observed cooked sausage and cooked chorizo cooling in bags in the walk in cooler but being tightly covered (not allowing the heat to escape). These food items were in the appropriate time/temperature for cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Person in charge stated they were unsure of when the food in the unit became out of temperature. Person in charge voluntarily discarded out of temperature TCS food in the unit.
