Observed a large, deep container with marinara sauce that was prepared at 10am (6 and a half hours ago). Internal temperature observed is 60°F. Informed person in charge (PIC) that cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Advised PIC to utilize metal, shallow pans when cooling TCS food items. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Cooked brussels sprouts, mushrooms, broccoli, lamb bolognaise, and heavy cream in prep top cooler measured 54-59 degrees F at time of inspection. Items had been stocked over 4 hours prior and were discarded at time. Temperatures throughout unit varied, and a service call was placed at time. Please ensure all time/temperature controlled for safety food items are maintained at 41 degrees F or below when cold holding. Corrective Action: Corrected at time of inspection.
